Welcome to week number 4 of our CSA! This week we have:
- 4 quarts of yellow peaches (EarlyGlow is the variety)
- 1 quart of nectarines
-6 ears of white corn
- 4 cucumbers
- 4 Kirby cucumbers (like regular but smaller seeds and little less water)
- 2 zucchini
- 1 quart new potatoes
- 1 large eggplant
- 1 bunch beets
- 3 banana peppers (these are pretty spicy, tried one myself)
- string beans
- green leaf lettuce
Since we now all have lots of cucumbers, I wanted to pass along my father’s favorite cucumber salad recipe.
George’s Favorite Cucumber Salad
3-4 medium cucumbers 1 Tbs sugar
1 onion 1 tsp salt
1 1/2 c. vinegar black pepper to taste
1/3 c. water 1 TBS olive oil (optional, George has without)
Slice cucumber and onion very thin and place in a blowl. Combine vinegar, water, sugar, salt, pepper and optional olive oil. Pour over cucumbers and onions. Mix well and chill.

ZUCCHINI PANCAKES
1 ½ Cup grated, unpeeled Zucchini (drained for a little while)
2 T grated or finely chopped Onion
¼ Cup Parmesan Cheese
¼ Cup flour
¼ t Oregano
2 T Mayonnaise
2 Eggs
Mix all ingredients together lightly. Lightly oil a frying pan or griddle, and place over medium-high heat. Scoop out about ¼ cup of batter for each pancake and pour it onto the pan. Cook each side of the pancake until they are a golden brown color. Enjoy!
