

5 large ripe tomatoes, chopped
2 cucumbers, chopped
1 small red onion, chopped
1 small red pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped
2 cloves garlic, minced
juice of 1 lemon
1/4 cup basil, chopped
1 Tbsp. olive oil
salt to taste
Puree the ingredients in a blender or food processor until desired consistency. (I like mine slightly chunky) Chill and serve.
Hints: This soup is best the next day. Good with croutons too.
