

5 lg red potatoes
1/3 c. vegetable oil
1/4 c. cider vinegar
1 Tbs sugar
1 1/2 tsp chili powder
1tsp salt
dash hot sauce
2 ears of corn
1 small onion chopped
1/2 green pepper chopped
Cook the potatoes and cut into bite sized cubes. Combine the oil, vinegar, sugar, chili powder, salt and hot sauce, and pour over the warm potatoes. Chill at least one hour. Steam corn for 5 minutes, cool immediately under cold water and cut from the cob. Add corn, onion and green pepper then serve.
Optional: also really good mixed with cherry or grape tomatoes just before serving
