

1 c. dry bulgur wheat
1 1/2 c. boiling water
1 tsp salt
1/4 c. lemon juice
1/4 c. olive oil
1 clove garlic, crushed
4 scallions, finely minced
1 bunch parsley (~ 2 cups) minced
10-15 fresh mint leaves ( or 2 tsp dried)
black pepper to taste
2 medium tomatoes
1/2 cucumber, seeded and chopped
Combine bulgur wheat and boiling water in large bowl. Cover and let stand until tender (~30 minutes). Add salt, lemon juice, olive oil, garlic, and black pepper, and mix. Chill. Before serving, add remaining ingredients: scallions, parsley, mint, tomato, cucumber.
Hint: Great with warmed slices of pita
